Those would be the two I would choose from, as for which one to get, try and play one of each and buy which you like more.

Macassar Ebony
Hawaiian Koa
Rosewood

are all good choices, I dont know much about ash on an acoustic. The ebony looks great and will have a sound close to rosewood and maple, but closer to the rosewood side. Koa sounds similar to mahagony, but has some more overtones, a little bit more bass, and some more sustain. Rosewood has a real rich bass, but also has nice highs, and clarity.

Most of the guitars tone is decided by the top, so I suggest you go with what "looks pretty" for the back and sides.

I disagree, the back and sides will really change the tone of a guitar. granted a crappy sounding top is gonna really screw things up but the back and sides will play a big part of the sound.
