I have to add Indifference of pearl jam to the list. the acoustic version of Eddie and Ben Harper is so amazingly great. and it's only two chords most of the time. then I watch John Mayer playing Neon and gotta admit that his guitar skill kicks ass, but that doesn't help much if the song does not penetrate your heart

Sure you can write a great song using simple chords, but extensive and intricate chord structure makes for really interesting songs. As for writing Crash, if I had written the guitar melody I wouldn't be all that impressed with myself, but if I had written lyrics about being a peeping tom and making them come out like a love song, then I'd be proud.
